Everyone needs a creamsicle popsicle when the heat goes up!
Summer is in full swing and it is hot out!
When the heat goes up I really don't feel like spending much time in the kitchen cooking hot meals. I find myself wanting simple and quick meals that don't require turning on the oven. And frankly, all I really want is hydrating drinks like strawberry switchel, strawberry cucumber lemon water,hibiscus strawberry iced tea,agua frescas andlots of cold frozen treats like popsicles.
Who doesn't love an old fashioned creamsicle?
You can't beat that amazing flavor combo of creamy vanilla ice cream paired with sweet, icy, cherry bliss!
I can still remember the sound of the ice cream truck driving around in my childhoodneighborhood and all of the kids rushing outside to get their favorite frozen treat.
Creamsicles and fudgesicles were always fully stocked.
But those nostalgic yellow boxed versions that most of us grew up with are loaded with some not so lovely processed ingredients, food coloring and corn syrup.
Yikes! Not something I am comfortable serving my family.
There is nothing REAL about those creamsicles.
And friends, it’s really simple to make your own cherry creamsiclesat home!Trust me, your taste buds and tummywill thank youwhen you take a bite of these deletable cherry creamsicles.
My version includes whole fruit {who can resist those glorious stone fruit beauties ... cherries!!!}, a small amount of raw honey, a little bit of vanilla and some fresh whipped cream.
Just simple, whole, real food ingredients!
These popsicles don't last long in my freezer, my family gobbles them up so fast. On a hot summer day or evening, I have no problem sharing these nourishing Cherry Creamsicles with my little loves.
If you're sticking to a real food diet, you don't have to miss out on this summertime classic.
Go ahead and indulge, life is too short not to. Enjoy!
Cherry Creamsicles
Yield: 6-8 popsicles
Prep Time: 20 minutes
Inactive Time: 6 hours
Total Time: 6 hours 20 minutes
Old Fashioned Cherry Creamsicles! Creamy vanilla goodness paired with sweet, fruity, icy, cherry deliciousness in popsicle form, what's not to like? These delicious popsicles are the perfect Creamsicle® Copycat!
Ingredients
- 10 oz. or about 2 cups pitted fresh or thawed frozen organic cherries
- ¼ cup coconut water or filtered water {<-- this is my favorite coconut water}
- 1 cup raw cream or organic whipping cream {for dairy-free version, see Notes}
- 1 teaspoon organic vanilla extract
- 3-4 tablespoon raw light-colored honey (<-- I use local raw clover honey OR this raw honey)
Instructions
- Place a large mixing bowl in the fridge to chill to use the next day for the whipped cream. If you forget, no worries - just make sure the cream is very cold.
- If using frozen cherries, thaw the cherries.
- Add the cherries and ¼ cup coconut water or filtered water to a blender. Blend until pureed and no chunks remain. Set aside.
- Remove the chilled mixing bowl from the refrigerator. Using a mixer on low speed, whip the cream, vanilla and raw honey for about 30 seconds, then increase speed to medium for about 1 to 1 ½ minutes, or until the cream has become thick and fluffy and looks like whipped cream.
- Have your popsicle molds ready to fill. To get the marbled effect, you will need a spoon or small spatula and will need to alternate the whipped cream and blended cherry mixture. To assemble, use a spoon or small spatula to add about a tablespoon of whipped cream to 1 popsicle mold. Then add some cherry mixture and tap the mold on the counter to allow the whipped cream to settle at the top of the popsicle mold. Keep alternating the mixtures until you have filled the popsicle mold. Repeat until all popsicle molds are filled. It sounds complicated but it's really very simple. It takes less than 5 minutes to fill all of the popsicle molds.
- Place the full popsicle molds in the freezer for at least 6-8 hours until frozen, best overnight.
- When frozen, briefly run popsicle mold under warm water for just a second to help release the popsicle. If using stainless steel popsicle molds you usually don't need to do this for more than a second or two and they'll slip right out. If you're using BPA free plastic popsicle molds you'll usually need to run them under the water a little bit longer before they'll come out easily.
Notes
YOU WILL NEED:Standing MixerorHand-Held Mixer, Blender,Popsicle Molds, Spoon/Spatula
Yield:Finished popsicle yield varies. I can usually fill about 6-8 popsicle molds.
Popsicle Molds:I used thesestainless steel popsicle molds that come with reusable bamboo sticks. I also haveBPA Free popsicle molds, which are relatively inexpensive and easy to find online. Here is aBPA free popsicle mold that holds 10 popsiclesor a fun one that has adrip-free handle and slurper straw. You could also use little paper cups and popsicle sticks if you don’t have popsicle molds.
Dairy Free Version:You'll need coconut cream {from the tops of approx. 1-3 cans of full-fat coconut milk} to replace the cream.
- The night before you want to make the popsicles, place cans of coconut milk in the refrigerator. I recommend placing 3 cans in the refrigerator just incase one can doesn't quite form enough cream at the top. Sometimes coconut milk doesn't have the right fat content, so not enough cream forms at the top. While you're at it, place a large mixing bowl in the fridge to chill to use the next day for the coconut whipped cream.
- Remove the chilled mixing bowl and coconut milk cans from the refrigerator taking care not to shake them or tilt them. Remove the lids and scrape off the top thick white layer which is the coconut cream. Add the coconut cream to the chilled mixing bowl. You can freeze the remaining coconut water for later use in smoothies or other popsicles.
- Using a mixer on low speed, beat the coconut cream for about 30 seconds until it starts to become creamy and thickens slightly. Then add the vanilla and raw honey and continue to beat on medium speed for about 1 minute or until the coconut cream has become whipped and thick. Follow the above directions for filling the popsicle molds.

So great to see your comment today on the blog. I'm slowly making my way back into the blogging world now that life as slowed down a bit. These popsicles looks AMAZING!!! I make all my popsilces with a can of coconut milk and they are ways nice and creamy and flavorful. I hope the summer is treating you well. Can you believe the weather yesterday and today?? It was even too cold and windy for swimming yesterday. So crazy for July, but a welcomed reprieve from the 100+ heat.

I wanted to confirm regarding using coconut cream for noon-dairy version. Would I measure out 1 cup and still use coconut water or filtered water? If I'm to use coconut water, can I use the remaining liquid in the can?

Hi Kate, you'll still use the coconut water or filtered water for the cherry liquid base. Yes 🙂 you can use the remaining coconut water from the can for the coconut water-cherry mixture if you'd like. I tend to picky about coconut water flavor and prefer the flavor of Taste Nirvana brand or Harmless Harvest brand, but if you don't mind the coconut water, then go for it 🙂
