Traditional pralines are made by caramelizing sugar and stirring in nuts, usually pecans until they are coated with the caramelized sugar mixture. The mixture is then spooned onto a sheet of parchment paper and left to cool and harden. Once cooled, pralines become firm and can be enjoyed as candy or used as an ingredient in other desserts.

Pralines are commonly associated with the American South, particularly in places like New Orleans, where they are a popular treat and a traditional part of Southern cuisine. I also load up on pralines when visiting New Orleans or Charleston as I can’t get enough of these candies. Combine them with coffee and you will never go back to plain granulated sugar in your morning cup.

Equipment

Recipe Steps

Step 1: Chop the pecans and roast them in a 350 degree oven for 8-10 minutes.

Step 2: Add the sugars, water, and nuts to a sauce pan and simmer on medium-high heat for 5-8 minutes or until the sugar is all dissolved. Once the sugar has completely dissolved, take the pot off the heat and add the vanilla and a pinch of salt.

Step 3: Strain the nuts from the syrup mixture with a fine mesh strainer. Let cool and store in a glass jar with a lid in the fridge for up to 1-2 weeks. Save those left over nuts as toppings for other dishes, they are delicious in oatmeal or over yogurt!

  • Use a heavy-bottomed saucepan: Using a heavy-bottomed saucepan helps distribute heat more evenly and reduces the risk of sugar burning or scorching during the caramelization process.
  • Stir gently: When stirring in the chopped pecans and vanilla extract, do it gently and quickly. This minimizes the risk of the sugar crystallizing and helps ensure that the pecans are evenly coated with the syrup.

Ingredients

  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Light Brown Sugar
  • 1 Cup Water
  • 1 Cup Pecans
  • 1/2 Tsp Vanilla Extract
  • 1 Pinch Salt

Instructions

  • Preheat your oven to 350°F (175°C).

  • Spread the pecans on a baking sheet and roast them in the preheated oven for about 8-10 minutes, or until they are fragrant and lightly toasted. Keep an eye on them to prevent burning.

  • Remove the pecans from the oven and let them cool. Once cooled, chop them into smaller pieces.

  • In a heavy-bottomed saucepan over medium-high heat, combine the sugar and water. Stir until the sugar is dissolved.

  • Add the pecans to the pan and simmer the mixture for 5-8 minutes. Do not let the mixture boil, you just want it to simmer.

  • Once the sugar has completely dissolved, take the pot off the heat and add the vanilla and a pinch of salt.
